Warm, round notes of caramel fudge, cantaloupe and custard announce the arrival of Sullivans Cove spirit character. The second fill of this cask means there’s very little ‘oak grip’ to speak of – and structure wise, the thick, silky texture offers more than any oaky grip does. A tropical blast of dried mango, guava, sherbet and citrus rest above chocolate panforte, milk biscuits, dark cherries and earthy truffle. An impeccably layered palate.

Description:
Part of the ‘Old and Rare’ Collection which is designation reserved for the very few casks that are allowed to age for at least sixteen years that show incredible length and breadth of palate.
American Oak Old & Rare Second Fill Single Cask TD0048 was filled on the 18th of October, 2005 and decanted on the 11th of November, 2021, for a maturation of just over 16 years. To date this is the second oldest Second Fill cask ever released by the distillery, resulting in incredible co mplexity and flavour.
Each bottle comes in a unique, hand-made, solid walnut presentation box, and includes an information booklet and a letter of authenticity personally signed by the head distiller.

“Second fill casks display our distilleries character loudly and proudly. These casks have been with us since the mid-1990s where they started their life as virgin oak, and they have only ever matured our single malt whisky – no bourbon, no sherry, nothing else. Second fill casks allow for long term maturation, without being overtaken by the influence of oak or pre-fill. The result is a whisky in perfect harmony: our signature spirit character is met by a soft oak profile, allowing the fruity esters that come from our copper Alembic still, Myrtle, to shine”.

“The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.”
