Apricot nectar and coconut cream usher in round and bright notes of pine-lime ice cream, mango salsa and watermelon granita. Impeccably layered, the palate provides cocoa, malted milkshakes and syrup-soaked sponge, resting atop a base of sandalwood and incense.

Description:
This American Oak Tawny Single Cask TD0309 was distilled in August of 2008 and matured in an 300L, American oak first-fill cask previously used to mature Australian tawny fortified wine for 13 years before being decanted in March 2022. Bottled at 47.5% ABV and producing only 439 bottles, the whisky was created under the TD era (Tasmanian Distillery) meaning the expression was distilled between 2004 and 2016 when ‘Tasmanian Distillery’ were the owners of Sullivan Cove under the watchful eye of Patrick Maguire and his team.

Part of the ‘Old and Rare’ Collection which is designation reserved for the very few casks that are allowed to age for at least sixteen years that show incredible length and breadth of palate.
American Oak Old & Rare Second Fill Single Cask TD0058 was filled on the 16th of November 2005 and decanted on the 27th of April 2022, for a maturation of 16 years and 5 months. To date this is the oldest Second Fill cask ever released by the distillery, an incredible achievement for Tasmanian whisky. After such a long maturation, the 300-litre American oak cask, previously used to mature an older batch of Sullivans Cove single malt, yielded only 406 bottles at 49.8% abv. resulting in incredible texture and length of palate.
Each bottle comes in a unique, hand-made, solid walnut presentation box, and includes an information booklet and a letter of authenticity personally signed by the head distiller.

Second fill casks display our distilleries character loudly and proudly. These casks have been with us since the mid-1990s where they started their life as virgin oak, and they have only ever matured our single malt whisky – no bourbon, no sherry, nothing else. Second fill casks allow for long term maturation, without being overtaken by the influence of oak or pre-fill. The result is a whisky in perfect harmony: our signature spirit character is met by a soft oak profile, allowing the fruity esters that come from our copper Alembic still, Myrtle, to shine.
