The Nose is ripe and syrupy notes of white flowers, pineapple rings and mango pulp develop into sweet coconut and hazelnut cream. The Palate brings about more tropical confectionary – yellow rock candy, passionfruit coulis, lemon curd and Starburst lollies. The Finish, despite being over 16 years old, holds little to no oak grip! Just the silky texture of Sullivans Cove spirit, wrapped in caramelised white chocolate and lavender.

Description:
TD0079 is part of the ‘Old and Rare’ collection which is reserved for the very few casks that are allowed to age for at least sixteen years that show incredible length and breadth of palate.
The expression was filled on the 24th of February, 2006 and decanted on the 2nd of May 2022, for a maturation of 16 years and 2 months. The 300-litre American oak cask was previously used to mature an older batch of Sullivans Cove single malt, yielded only 435 bottles at 47.4% abv. Each bottle comes in a unique, hand-made, solid walnut presentation box, and includes an information booklet and a letter of authenticity personally signed by the head distiller.

Interesting fact.
The bottling code TD stands for ‘Tasmanian Distillery’ which means the whisky was distilled and filled into barrels between 2004 and 2016 when ‘Tasmanian Distillery’ were the owners of Sullivan Cove under the watchful eye of Patrick Maguire.
