Producer’s tasting notes
Nose: Banana, walnut, crème caramel, liquorice, kumquats, black pepper, camphor, and antique oak
Palate: Creamy and sweet with flavours of banoffee pie, meringue, macadamias, sweet pastry, toffee apple, and milk chocolate fudge
Finish: Vanilla, coconut and preserved fruits with a malty cocoa line that drives the finish and lingers almost indefinitely.

Bottling Notes
The Pinnacle of the Sullivans Cove Stable.
Part of the ‘Old and Rare’ Collection which is a new designation reserved for the very few casks that are allowed to age for at least sixteen years that show incredible length and breadth of palate. This Cask HH0105 was distilled in December 1999 and decanted in May 2018 for a maturation of eighteen years and six months in a 200L American oak ex-bourbon cask.
The distillery comments:
“This delightfully complex and textural whisky’s fruit and fresh grain notes defy its proud position as one of the oldest Australian single malt whiskies ever released”.
Each bottle comes in a unique, hand-made, solid oak presentation box, and includes a letter of authenticity personally signed by our Head Distiller, Patrick Maguire and Production Manager, Heather Tillott.
This piece of Australian whisky history sold out on the Sullivans Cove website in under 8 hours and we only have a handful to sell.
