Description:
Here’s your chance to own a piece of liquid history from Sullivans Cove with this 21-year-old age-statement that’s both the oldest Sullivans Cove whisky the distillery has ever released and, as far as we know, the oldest official distillery release of Australian single malt whisky in modern history, only rivalled by the 24-year-old from Cradle Mountain Distillery bottled internationally by Scottish distributor ‘Cadenhead’ that was not released in Australia.

The spirit in this expression was distilled and filled during the Highland Holdings (HH) era of ownership on the 21st of March 2000 and matured for 21 years and 2 months before being decanted on the 28th of May 2021 after an incredible, decades long maturation weighing in at 48.3% ABV. The style of spirit the distillery was producing in the year 2000 was destined for long-term maturation, and the benefits of those extra years are abundant in this cask.

Each bottle comes in a handmade, solid oak presentation box with a hand numbered certificate of authenticity signed by Production Manager, Heather Tillott.

“Our goal is to make the best whisky that we can, but what’s a goal if you don’t stick to it? This whisky symbolises our commitment to just that. Sticking to a whisky, one barrel at a time, for 21 years. That’s just over 7,700 times the sun rose and set on this barrel, 7,700 opportunities a Distillery Manager of the past could have decanted and sold it. It takes a lot of patience.”

The difference between this 21-year-old (HH0229) expression and the 21-year-old released in 2019 for Sullivans’ 25th anniversary is that this bottling is a single-cask whisky and the 25th Anniversary bottling was a vatting of four casks.
