Official tasting notes
“The decadent combination of creamy toffee, caramel fudge, chai tea spice and cake batter is heightened by an extraordinarily thick and waxy texture, one which can only come from a meticulous 22 year maturation”

Description:
Here’s your chance to own a piece of liquid history from Sullivans Cove with this 22-year-old age-statement that’s both the oldest Sullivans Cove whisky the distillery has ever released and the oldest official distillery release of Australian single malt whisky in modern history. It’s only rivalled by the 24-year-old from Cradle Mountain Distillery that was bottled internationally by Scottish distributor ‘Cadenhead’ that was not released in Australia.
The spirit in this expression was distilled and filled during the Highland Holdings (HH) era of ownership on the 2nd of November 1999 and matured for 22 peaceful years in a first-fill 200L American oak ex-Bourbon cask. The whisky was then decanted on the 14th of April 2023 at an astonishing 54% ABV with a yield of 58 bottles. The style of spirit the distillery was producing in 1999 was destined for long-term maturation, and the benefits of those extra years are abundant in this cask.
Each bottle comes in a handmade, solid oak presentation box with a hand numbered certificate of authenticity signed by Production Manager, Heather Tillott.
Heather Tillott comments;
“A fantastic journey through the one of the most quintessential and true-to-style single casks of its era within the Sullivans stable. Bright fruit, beguiling brine and alluring spice reflect spirit style, and are supported beautifully by sweeter notes of the American Oak vessel from yester-Bourbon. There is nothing about this whisky that wants to be kept within a confine of glass. It is BOLD. Nevertheless, however, by no means brash. Rather, exceedingly vibrant and charismatic. I’m drawn in, hook, line and sinker. In fact, I think I’ll jump in after it.”
We only have a few bottles available for sale so the offering is limited to one per customer.
