Nose: An ocean of apple juice and Stroopwafel awaits… Splash. A biscuit factory follows, with the nose then moving into a mix of fruit (canned fruit salad, glacé cherry, boysenberry ice-cream) and darker earthier notes of salted chocolate, chocolate slice, an herbal liqueur and the browning leaves of an Autumn vineyard.
Palate: Excellent body and texture, with brilliant flow and fill. Orange and poppyseed cake, lamingtons (with the strawberry jam inside), apricot pastries in the oven, flat peaches, and a sweet vanilla flavour. A nice touch of waxy, tropical flowers.
Finish: Chocolate slice really wants to make itself known, alongside caramel fudge. The herbal liqueur present on the nose also comes into play and marries very well with the chocolate and caramel theme. Toasting sourdough, and biscuits. A fun burst of sherbet and banana paddle pop brings brightness to the deep and sultry choc-fest, and the finish is long, lingering and textural.

Description:
This Double Cask DC111 is a marriage of portions from ten different casks, ranging from the HH (Highland Holdings) era (1999-2004) to the TD (Tasmania Distillery) era (2004-2016). The casks range from 7yo to 20yo whiskies and the expression is purportedly the highest strength Double Cask ever bottled at 50.3% ABV
The spirit was aged in a combination of French and American oak casks, every tiny batch expressing the unique characteristics of both styles. With incredible complexity and length, Double Cask has a rich palate of sweet malt, dried apricots, honey and freshly baked bread. Non-chill-filtered and with no added colour.

“All one would hope and dream for in a Double Cask: thick, silky, malty, full of stone fruit, and a distinct Autumnal vibe. The higher ABV in this marriage is noteworthy here: this dram has broad shoulders, and can take water well: expect more fruit.”
