Official tasting notes:
Nose: Immediately rich and alluring, the stage is set early for a weighty, broad-shouldered dram. The darker components of Muscat present themselves first: medjool dates, honeycomb and spiced fruit toast, backed up by the structured coffee and oolong tea oak notes. Caramel, banana, cola bottles open up with some air, while delicate trails of baking spice and eucalyptus weave throughout.
Palate: Honeycomb and fruit toast lead the charge, and we move into a palate-realm as deep and dark as the nose: leather, prunes, cinnamon and tobacco, with a gentle bacon note. But we’re not lost; the guiding structural finesse of French Oak steers the ship with an earthy, herbal grip throughout the centre of the palate, holding space for brighter notes of candied orange peel and rose syrup. Silky.
Finish: A natural flow from palate to finish highlights the integration achieved here. Oolong tea returns alongside cherry ripe, fruit compote, subtle baking spice and a big banana milkshake. Spirit and oak are very well integrated in flavour and texture; harmonious and delicious flavour flows in abundance.

Description:
Every once in a while, Sullivans Cove finds something exceptional in their warehouse, different from their usual French oak tawny and American oak bourbon casks. They label these offerings ‘Special Single Cask’. Each Special Cask release will be different, and only one or two casks will be released each year. These might be wine barrels, virgin oak, refills, or something else entirely, but if it’s got a green label, you can be sure you’re getting something unique and incredibly special.
This Special Cask Edition #15 was aged for 13 years and 11 months in a single 325-litre, first fill French oak ex-Muscat cask. Bottled at 47.6% abv, the barrel caught the attention of the Sullivans Cove tasting panel – so much so that they named her Rosie.
The distillery tells us that Rosie is;
“An incredibly alluring French oak ex-Muscat single cask whisky, the dark and light components of this iconic Australian fortified wine style integrate so naturally with our citrusy, briny and bold Sullivans Cove spirit character………… The result? A match made in heaven.”
Heather Tillott, Distillery Manager comments;
“Incredibly, the delicacies of Muscat have not been lost to the savoury grip of French Oak. They have married and mellowed together; a balanced Ying/Yang situation which embraces the nuances of all parties. A rich and sumptuous single cask!”
