Bottling Notes
This is Kilchoman’s second official Fino sherry matured release that was laid to rest in 20 Fino Sherry butts previously used by Bodega Jose y Miguel Martin for a minimum of 5 years. The result is a wonderfully crisp and drying whisky with hints of salinity, balanced out with green fresh fruit. Like all Kilchoman expressions, the whisky in non-chill-filtered and with no added colour!

What is Fino sherry?
Fino is Spanish for ‘delicate’ and is one of the driest and palest of the traditional varieties of sherry coming from Palomino grapes. The sherry is biologically aged, entirely under a layer of flor. This cap of yeast prevents contact with the air while at the same time transforming the wine as it ages.
