Official tasting notes
At 55% ABV, the whisky delivers the most balance between raw peat ashes, frothy seawater, lemon juice drizzled directly over your tonsils and having pickled green olives fired at you from a blunderbuss.

Description
Bottled by Decadent Drinks Ltd, this release is Edition No.63 in the Whisky Sponge series that was distilled at Knockdhu, one of Scotland’s smallest distilleries located in Speyside. This (60+ PPM) peated delight was matured in a refill hogshead for 16 years and then bottled at 55% ABV.
Whisky Sponge comments;
“…….. very peaty and quite ridiculously pale, pure and razor-sharp. A singular and almost ideological style of whisky. The original cask strength of this one was up over 67%. Once we’d found a glass that didn’t dissolve on contact with the sample, we played around with water and various strengths for ages before settling on 55%.”
About Knockdhu Distillery
The Knockdhu distillery is located in Knock, Banffshire and is owned by Inver House Distillers Limited. Established in 1894, it’s one of Scotland’s smallest whisky distilleries and due to confusion with the similarly named Knockando distillery, the whisky now produced by Knockdhu is sold under the name ‘AcCnoc’ although they do use the name Knockdhu from time to time adding to the confusion.
The distillery draws its water from burns on the nearby Knock Hill with a production capacity of 1.5 million litres a year. Independent bottlings from the site are far and few between with Knockdhu whisky used as a core blending component in the Inver House Blends.
