Here we have Fossey’s 3rd batch port cask, single malt whisky release that was distilled off-site by highly-rated whiskey-maker, Brian Hollingworth at his Black gate Distillery on behalf of Steve Timmis, owner and distiller of Fossey’s Ginporium. Matured in very old port barrels re-coopered form 300 litres to 100 litres and stored in the Mildura climate that’s known for cold nights and hot days, means a lot of breathing in and out through the barrel walls. Although the Angels in their part of the world take far more than their fair share, the result is an exceptional whisky with a firm cask influence
