This is Fossey’s 2nd batch single malt, peated whisky distilled off-site by highly-rated whiskey-maker, Brian Hollingworth at his Black gate Distillery on behalf of Steve Timmis, owner and distiller of Fossey’s Ginporium.
Hand crafted using only the very best Peated malt from Scotland, this Whisky is the result of old school traditional methods of whisky-making. Using a small copper still but with a strong Australian influence on maturation, Fossey’s uses 100 litre barrels re-coopered from 300 litre sherry casks and then the spirit is left to mature to perfection in the Mildura climate of wild temperature variations. The Angels take more than their fair share resulting in a concentrated flavoursome Whisky.
Each bottle is individually signed and numbered by the distiller with the previous release already a sell out at the distillery and our virtual shelves.
Stay tuned for Fossey’s very own Mildura-made whiskey that was distilled on-site by Steve Timmis that
will be available around 2021 as the spirit has just been laid to rest.
