Colour: Dark amber ruby
Nose: Stewed prunes with a touch of nougat
Taste: Dark stone fruit syrup upfront with chewy caramel across the mid palate, finishing long with raspberry tartness and a touch of sweet cinnamon and allspice

This is delivered in Byron, but the spirit is conceived in Tasmania – Ex tawny barrels. My uneducated bet would be Adams.
If a Porter, dark ale was a whiskey. This would be it. A hint of espresso, dark chocolate – Lindt 90% Cocoa, but it walks tantalisingly on the tightrope of too much..but never ever crosses that line. It’s quite a feat. Now that’s balance.
It’s clear this is not a dram made to a formula…but the story starts with the spirit and the wood. It is a unique and one off expression that just smacks of TLC. I respect that. Exciting and unknown. I look forward to trying another Highwayman but I honestly don’t know what to expect – Not totally true…I expect individual expression with attitude. It’s a home cooked meal in the world of TV dinners and fast food. One feels it is personal, never the same twice, but made with love, and received and enjoyed with the same spirit.
