Nose: Caramel & raisins
Palate: Lifted floral notes, caramel and dried fruit sweetness with some white pepper savory hints
Finish: Delicious long and slightly dry finish which is indicative of some very fine old wood. A slightly smokey note that suggests peat but comes from the heavy cask charring

Spring Bay’s ‘Sherry Cask’ Tasmanian single-malt whisky from the Spring Bay distillery was was laid to rest in a premium sherry cask and then bottled at 46%alc. The distillery is releasing their whisky in 700ml bottles which is a real rarity these days for Australian producers.
Located on Tasmania’s east coast, the flavour of the local sea salt at Spring Bay softly infuses into their fresh rainwater allowing for a very subtle marine influence with beautiful, sweet undertones.

Spring by name, spring by nature. Sweet, thin, strawberries, watermelon. Fruit cake, watered down. The juice left in the bottom of a tub of fruit salad. Reminiscent of Iron House, but that’s more on the banana end of the fruit bowl.
A whisky to have in the sun…overlooking spring bay.(not on a rainy Friday afternoon ….context is important…and I acknowledge that influence in this review.) Seriously – get a photo of spring bay – thanks google – make it full screen…and sip again….tell me it’s not different. Better already.
Pleasant enough….but without the spring bay vista….it doesn’t travel well.
