Nose: A gentle and deep ocean of savoury spice on sugar awaits: sandalwood incense, anisette cookies, Lotus Biscoff, sweet cinnamon, nutmeg and brown sugar. Sweet grain, kind of like Nutri-Grain, marshmallows and ypovrichio. A medley of walnuts, hazelnut praline and apples moves into bright lemon marmalade, lime musk and old school roses. An earthy, forest soil note is the perfect base for all.
Palate: A sweet, fruity burst turns into a fun and bright lemon sherbet/lemon marmalade pop. Blueberry jam and yellow nectarine come through, with scones and sweet grain proving a lovely foundation. Brown sugar again throughout, as the nose. A full body with brilliant oak integration allows for a slippery and silky texture with no grabbing or hard lines to be found: all elements are as one.
Finish: Ypovrichio again, with apple pie filling. Another burst of fruit, this time with bright cantaloupe and sweet kumquat. A hint of black jellybean or soft licorice, a lot of Monte Carlo biscuits, and then a pop of lime musk and lemon marmalade for a lengthy finish. Silky texture throughout.

Description:
This Double Cask batch number DC112 is a marriage of portions from ten different casks, ranging in age from 7 to 20 years. As well as whisky from several American oak ex-Bourbon casks, this batch also contains whisky from both American and French oak casks, which have been previously used for either Tawny, white wine, or red wine. Eight of the casks were distilled in the Tasmania Distillery (TD) era under Patrick Maguire (Year: 2008-2016) with two casks distilled in the earlier Highland Holdings (HH) era (Year: 2000-2003)
Each batch of Sullivans Cove Double Cask whisky is bottled at a variable ABV. By tailoring the ABV for each batch, the Distillery can choose a strength that brings out the best in the whisky. For DC112, that was 47.5%.

An excellently structured and integrated marriage of quite diverse elements; each variety of oak and prefill are present, not least of all the tell-tale signs of the Sullivans spirit, and together combine to birth a wholly unique and stunning beast. Sullivans showing they’re not just a one trick pony in regards to cracking Single Casks; they’re rather deft with both the bat and the ball and can knock the married malts out of the park, too.”
