Caol Ila and Palo Cortado sherry definitely has our attention!
This expression was distilled at the Caol Ila Distillery on the Scottish island of Islay. The spirit was firstly matured in ex-bourbon barrels before been re-racked into delicious Palo Cortado sherry casks for a long finish before bottling 2023. Like all Cadenhead’s expression, this whisky was bottled with no added colour and no chill filtration.
About Palo Cortado Sherry
Palo cortado is the rarest form of Spanish sherry and traditionally occurred only by accident and can best be described as a blend of Amontillado and Oloroso. It’s initially aged under flor to become a Fino or amontillado, but inexplicably loses its veil of flor and begins aging oxidatively as an oloroso. The result is a sherry with some of the richness of oloroso and some of the crispness of amontillado.
(Flor is defined as “yeast allowed to develop in a whitish film on the surface of dry (Fino) sherries and similar wines during fermentation).
